Fried Vegetable Rice with Quorn Recipe

Looking for a delicious and somewhat healthy meal? Well you’ll want to try this delicious Fried Vegetable Rice with Quorn recipe, because it tastes great.

Having messed around with the ingredients a little, we’ve discovered that you can also substitute the Quorn for Chicken, if you have any meat lovers in your family. Either way, it works.

Fried Vegetable Rice with Quorn Recipe

This is one to make ahead of time for the best flavours as you’ll want to marinate the Quorn and/or chicken, for this you will need the following:

  • Half pack Quorn/Chicken pieces (this will be enough to serve 2 people)
  • 3 tbsp Soy Sauce
  • 1 tbsp Peanut Butter (We used Whole Earth Organic Crunchy)
  • 2 tsp Sweet Chilli Sauce
  • 1 clove Garlic, chopped finely
  • 2 tsp

Make the sauce up by mixing the ingredients above and place in a freezer bag along with your Quorn or Chicken. The purpose for this is to marinate the Quorn/Chicken. We done this five hours ahead of time and just left it in the fridge and the result was some really intense flavours.

As for the rice and vegetables, we used the following:

  • 2 Cups Brown Basmati Rice
  • 6 Mushrooms, (chopped)
  • 3 Spring onions (sliced)
  • 3 Cloves garlic (chopped)
  • 1 tsp Freshly (chopped) ginger
  • 1 Red pepper (sliced)
  • 1 Yellow pepper (sliced)
  • 1 Orange pepper (sliced)
  • Soy sauce to taste
  • Sesame oil

Wash the rice then cook in boiling water for around 30 mins with the lid off. Next, put a lid on the pan and leave off the heat to cook in its own steam for around 10 mins. If you wish you can cook the rice ahead of time also and leave it aside as you’ll fry it later.

To prepare your dish for eating, heat some sesame oil in a large wok until smoking and then carefully place the vegetables in. Cook until soft, adding soy sauce to colour and taste, before putting in the rice and frying altogether, adding in more soy sauce to colour and taste.

Meanwhile, heat the Quorn/Chicken in a separate pan, once again frying in some sesame oil for around 5 minutes until warm in the middle.

Dish the rice up into a bowl, sprinkling the Quorn/Chicken on top and enjoy.
