225g Unsalted butter
225g Caster sugar
4 free-range eggs
50ml Strong espresso coffee
225g Self-raising flour

First mix the butter and sugar together to form a creamy mixture. Next add in the rest of the ingredients and mix until well incorporated.

The final step for the cake is to divide between the two cake tins and bake for around 25-30 mins until springy. Also try placing a knife through the middle of the cake and if it comes out clean it’s ready.

Finally, place the cakes aside to cool and then turn onto a wire rack.
