Our latest pizza is a stunning vegetarian creation using caramelised onion, fried aubergine and seitan sausage.
So good. To make the sausage at home, do the following:
• 1 Can Pinto Beans (or drained Baked Beans for extra flavour)
• 1 tbsp Thyme, dried ground
• 1 tsp Veggie stock cube
• 1 tbsp Worcestershire, vegan
• 2 Cups All-purpose flour
1/2 Cup Oats
• 2 tsp Fennel seed, ground
• 1/2 tsp Paprika
• 1 tbsp Salt
• 1/2 cup Refined coconut oil
• 1/3 cup Water
Blend until combined. The texture should be quite dough like and therefore easy to shape into sausages. From here, wrap each individual sausage in tin foil and put in a steamer for 40 minutes.
Leave to rest and cool. You can then fry if using straight away or freeze them for another day.
