Our latest creation uses a little Italian Stew that was inspired by a Sicilian Pasta. It includes Aubergine, Tomato, Capers, Olives and Pepper.

To make the stew simply cut up some peppers and gentle fry with onions, garlic and the aubergine. Once softened add in the tinned tomato, olives, capers and garlic.
Season to taste.
