Aubergine Italian Stew on a Woodfired Pizza

Our latest creation uses a little Italian Stew that was inspired by a Sicilian Pasta. It includes Aubergine, Tomato, Capers, Olives and Pepper.

To make the pizza dough use my recipe in the following video:

To make the stew simply cut up some peppers and gentle fry with onions, garlic and the aubergine. Once softened add in the tinned tomato, olives, capers and garlic.

Season to taste.
