I love tiramisu, it is one of my favourite desserts.
What is great about it is how simple it is, so when creating a dessert pizza I wanted to keep it simple and delicious. I’m happy to report it works a treat.
For this recipe I used a double fermented dough, here’s how I made the dough:
- 300g Type 00 Flour
- 300ml Water
- 5g Dry Yeast
- 5 Honey
Mix and leave in the fridge for 24 hours.
- Next day add:
- 450g Type Flour
- 200g Semolina
- 5g Salt
- 3g Dry Yeast
Mix, leave in the fridge until ready to ball up. Once balled up, leave for 1-2 hours before using.
Once you have the dough, you’ll need the Tiramisu ingredients.
To make the coffee syrup simply mix half a cup of sugar with half a cup of coffee and bring to the boil for 3-4 minutes. Leave to cool.
This syrup can keep for months, so you can use it elsewhere too.
For the Mascarpone cream simply mix one tub with a pot of double cream and 100g sugar. Add a dash of vanilla extract to enhance the flavour.
