Tiramisu Cupcake with Homemade Coffee Syrup Recipe

If you love coffee and love cupcakes, then the following recipe is probably one of our best ever. It just tastes so good.

This is a simple enough recipe, which can be made within around 25 minutes, but they taste so delicious.

Preheat the oven to around 175c and prepare a 12 hole cake tin with cupcake cases.

Tiramisu Cupcake with Homemade Coffee Syrup Recipe

  • 1 tbsp good strong coffee
  • 115g soft butter
  • 140g self-raising flour
  • 140g caster sugar
  • 2 tbsp milk
  • 2 large eggs
  • 1 tsp vanilla extract

For Icing:

  • 250g tub mascarpone
  • 200g icing sugar
  • 50g dark chocolate (grated)

For the Coffee Syrup

  • 1/2 cup caster sugar
  • 1/3 cup strong coffee

Cream together the butter and sugar, before adding in the flour, eggs, coffee, vanilla and milk. Once well combined, divide the mixture between the 12 hole cake tin. Bake in the oven for around 20 minutes until risen and golden brown. Leave aside to cool.

To make the coffee syrup, add the sugar and coffee to a pot and heat, whislt constantly stirring. Once small bubbles start to form, stir some more, then reduce the heat and stir for 1-2 minutes. Leave aside to cool and transfer to a jar.

To make the icing, empty the mascarpone into a bowl and slowly sift in the icing sugar until well combined and stiff but spreadable. It’s best to add around 50 grams of icing sugar at a time until you get the consistency you want. Once the cakes are cool, spread the icing on top and finish off with a some chocolate sprinkled on top.

When serving the cakes, drizzle a little coffee syrup on top for an added coffee kick, it really makes a difference and turns these cakes into something quite special.
