We love the muffins that you buy from cafes and bakeries, so we decided to try and replicate them using the following recipe which uses chocolate chips, although you can easily substitute this for blueberries.
Before starting pre-heat the oven to 225c and grease the top of a large 6 hole muffin tray and the line with muffin cups (this stops the lips of the muffins sticking to the top of the tray).
Proper Muffin Recipe Ingredients
- 375g Self-raising flour
- 4 Teaspoons baking powder
- 1/2 Teaspoon salt
- 1 Teaspoon ground cinnamon
- 1/4 Teaspoon ground nutmeg
- 2 Eggs (room temperature)
- 200g Granulated sugar
- 240ml Milk
- 120ml vegetable oil
- 1 teaspoon vanilla extract
- 270g semi-sweet chocolate chips
Directions
In a large bowl, mix the flour, baking powder, salt, cinnamon, and nutmeg until combined.
Next, in a separate bowl, whisk together eggs and sugar, then mix in the milk, oil, and vanilla. Fold wet ingredients into dry ingredients and mix together by hand with a wooden spoon. Don’t Overmix.
Once you have managed to get the flour is off the bottom of the bowl fold in the chocolate chips.
Finally, divide batter among prepared muffin tins, filling all the way to the top. Place in the oven and bake at 220c for 5 minutes, then reduce the oven temperature to 190c and continue to bake for 25 minutes.
Allow to cool for 10 minutes and enjoy.
