When visting my favourite Italian restaurant in Brighton, should I be able to manage a desert then I always order a Coppa Rustica, a lovely mixture of fresh vanilla ice cream, cream, chocolate sauce and meringue.
Yes, it tastes as good as it sounds. So here’s our version.
Coppa Rustica Ice Cream
First off we make our own ice cream using our base Vanilla Ice Cream Recipe and then we make our own chocolate sauce, the recipe for which follows.
Chocolate Sauce Recipe
- 225g dark chocolate, broken into pieces
- 80g caster sugar
- 120ml double cream
- 60ml hot water
To make the sauce simply place all the ingredients in a pan on a low heat until the chocolate has melted and then leave aside to cool.
Obviously you can also make your own meringue, though to be honest we usually just buy meringue nests from the supermarket as they are just as good really.
To Assemble
Assembling the Coppa Rustica is easy. Get a large desert dish and place some crumbled meringue in the bottom, followed by some chocolate sauce. Next add the ice cream and repeat the process by adding more meringue and chocolate sauce then more ice cream. Finish off by putting some real whipped cream on top, followed by a sprinkle of crumbled meringue and some chocolate sauce.
This really is an amazing dessert, especially if you have a sweet tooth.
