Good Granola Recipe

We do like our sugar, however sometimes it’s nice to have a healthy start to the day and what better way to pack in some good nuts, fruit and seeds than with granola.

The recipe below uses coconut oil, which while expensive is extremely good for you. Add in the seeds and whatever dried fruit you like, serve with some greek yoghurt and you can’t go wrong. It’s also really easy to make, which is a double bonus.

Good Granola Recipe

Ingredients

  • 2 tbsp coconut oil
  • 125ml maple syrup
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 300g rolled oats
  • 100g pack mix seeds
  • 100g driedĀ fruit (whatever fruit you like) – The granola we made in the picture has dried strawberries and blueberries
  • 1 handful of hazelnuts (or nuts of your choice)
  • 50g dried coconut

Method

To make this recipe, simply mix the oil, honey, vanilla extract and maple syrup together. You’ll likely need to melt the coconut oil up first just to turn it into liquid form. Once combined add in the oats, seeds and nuts and spread over two baking trays. Next, bake for 15 mins at 150c then add in the mixed fruit and coconut and combine. Put in the oven for 10-15 minutes more.

You can either serve warm with yoghurt or seal in an airtight container. The granola keeps for about 1 month, so it’s a great thing to keep aside for a quick, healthy breakfast.
