Here’s something a little different. Doughnut Muffins.
This recipe came about by us trying to bake some doughnuts since we were all out of deep frying oil. The muffins in the picture obviously don’t look like doughnuts, but they do taste like them. If you happen to have a doughnut tray lying around then great, otherwise just grab a muffin tray and use that instead.
Pre-hear the oven to 170c and use this recipe.
Baked Doughnut Muffin Recipe
- 100G Butter
- 150 Caster Sugar
- 2 Eggs
- 300G Plain Flour (sifted)
- 2 Teaspoons of Baking Powder
- Pinch of Salt
- 1/2 Teaspoon of Nutmeg
- 230ml Milk
Method
Mix the butter and sugar until creamed, then add in the eggs until well mixed. Next add the sifted flour, salt, nutmeg and baking powder, followed by the milk.
Once you have a consistent mixture, place the cupcake cups in the tray and fill each one to around 2/3. We managed to make around 14 muffins, although you may get more depending on the size of your tray.
Bake the muffins for around 20 minutes until they brown slightly.
To Finish
Melt some butter and dip the muffins in it while still warm, then dip in a mix of sugar and cinnamon.
