To make this sauce simply marinade some garlic with thyme, basil and extra virgin olive oil for up to four hours or even overnight for maximum flavour. Then add to two tins of San Marzano tomatoes with a teaspoon of sugar (or honey), salt and pepper. Simmer to reduce the water content for at least 15-20 mins and then roughly blend. Leave to cool before use or store in the fridge for use the next day.
