This delicious pizza was inspired by a pizza restaurant known as The Oven in Bath, England.
Consisting of a tomato base, smoked mozzarella and caponata, which is an Italian Aubergine dish, this is a really tasty pizza which you have to try.
To make this pizza, first you’ll need to make the caponata, which luckily is quite simple and also goes delicious with Spaghetti, Cous Cous or as a side dish, so it’s worth making enough for another meal, as well as what you’ll need for the pizza.
Ingredients:
– 2 Aubergines (cut into small cubes) – 1 Red Onion (diced) – 2 Sticks Celery (diced) – 1 Red Pepper (diced) – 3 Cloves Garlic – 500g Tinned Tomatoes (Tinned Mutti Pizza Sauce works perfectly) – 2 Tbsp Red Wine Vinegar – 100g Black / Green Olives – 3 Tsp Caper – 1 1/2 Tsp Sugar – Salt and Pepper to season |
To make the caponata fry the aubergines until they start to brown and then in a separate pot fry the onions, peppers, garlic and celery. Once soft add the ingredients together and then add the rest of the ingredients.
Let the mixture reduce and season to taste. The cook should take about 20 mins, but make sure not to overcook it as you don’t want the mixture to be mushy.
