Scottish Snowball Recipe

We love the combination of coconut, jam and sponge and Scotland has a perfect recipe in Scottish snowballs.

These cakes are as cool as ice and delicious too.

Preheat the oven to 200c and grease a large baking tray.

Scottish Snowball Recipe

  • 75g Caster sugar
  • 75g Self raising flour
  • 2  Eggs
  • Strawberry jam
  • 200g Icing sugar
  • 2 Tbs Warm water
  • 75g Dessicated coconut

Whisk the eggs, then add the sugar, mixing both together until you have a creamy thick white mixture. Sift in the flour and fold gently. Next simply  place some small spoonfuls of the mixture onto the baking tray, making sure they are well apart.

Bake for five minutes until golden and then sit for another five minutes until cool. Place on a wire rack while you prepare the icing.

To make the icing whisk the warm water into the icing sugar until you have a thick consistency. Spread half of the cakes with jam and then stick them together. Dip the cakes into the icing and then dip the same cakes into the bowl with the coconut.

Leave aside to set and then enjoy.
