Custard and White Chocolate Cookies recipe

140g soft butter
140g caster sugar (and a little to sprinkle on top of the cookies)
1 egg
1 tsp vanilla extract
225g self-raising flour
80g custard powder
80g white chocolate, chopped into chunks

First, mix the butter and sugar togetherĀ until light and fluffy, before adding in the egg and vanilla. Mix well and then add in theĀ flour and custard powder and work into a large dough ball. Push the white chocolate chunks into the mixture, making sure they are well spread.

Next, make around 25 walnut sized balls. Spread them out onto the trays. We managed about 18 between the two trays and once ready we made the remaining seven. To make the cookies, place the dough balls onto the trays and then flatten slightly with your hand. Put them into the oven and bake for around 12-15 minutes, keeping an eye on them so they don’t over bake.

Once ready take them out the oven and leave to cool and bake any cookies remaining by following the steps above.

These are so delicious, so try not to eat them all at once.
