Coffee and Walnut Cupcake Recipe

We love any cake with coffee but decided that it would be nice to have something a little more bite sized, so came up with the idea of Coffee and Walnut Cupcakes.

This is a simple enough recipe, which can be made within around 25 minutes, but they taste so delicious that you wouldn’t mind spending double that time in the kitchen.

Preheat the oven to around 175c and prepare a 12 hole cake tin with cupcake cases.

  • 1 tbsp good strong coffee
  • 115g soft butter
  • 140g self-raising flour
  • 140g caster sugar
  • 2 tbsp milk
  • 2 large eggs
  • 25g walnuts

Icing

  • 1 tbsp good strong coffee
  • 225 Icing Sugar
  • 100g soft butter

Cream together the butter and sugar, before adding in the flour, eggs, coffee and milk. Once well combined break up and stir in the walnuts, before dividing the mixture between the 12 hole cake tin. Bake in the oven for around 20 minutes until risen and golden brown. Leave aside to cool.

To make the icing, combine all the ingredients and once the cakes are cool, spread the icing on top and finish off with a walnut on top.

These cakes are delicious, so try not to eat too many at once.
