CupCakes are easy to make and very versatile for kids parties or just for a treat, so we decided to do our own twist on them, taking inspiration from CakePops and creating our own, full size ‘cupcake’ version.
To make our chocolate covered cupcakes we use the following simple ingredients, although first pre-heat the oven to 180c.
Chocolate Covered Cupcake Recipe
- 130g Caster sugar
- 130g Butter
- 130g Self raising flour
- 2 Eggs
- 1 Teaspoon vanilla extract
Method
Simply mix the butter and sugar together until you have a creamy mixture and then add the rest of the ingredients, mixing together until blended well. Next, place some fairy cake cases into a 12 hole cupcake tin and divide the mixture between them. There should be enough mixture for 12 full size cupcakes.
Place the cupcakes in the oven for around 15-20 minutes and then leave on a wire rack to cool. Next, melt the chocolate of your choice (we used both milk and white chocolate) in the microwave for around 40 seconds or alternatively, place in a glass bowl sat on top of some simmering water and slowly melt.
Once you have the melted chocolate dip the cooled cupcake in, using a teaspoon to make sure the entire cupcake is covered in chocolate. Place on a separate plate and sprinkle on your decorations of choice. Once you have done this with all the cupcake place in the fridge to allow the chocolate to set.
These really are awesome cakes.
