We love Italian desserts, as you may have noticed. So how about this time we show you have to make some Italian biscuits or as the Italians like to call them, Biscotti.
Below in the picture are a few variations, although you can easily add whatever you like. In the picture we have Chocolate, Pistachio and Orange Biscotti. While the other variation is mixed nut Biscotti with Almonds, Hazelnuts and Pistachio. You can add whatever you like to the base recipe below, so use your imagination.
Line a large baking tray and pre-heat the oven to 160c.
Biscotti Recipe
- 280g plain flour
- ½ tsp baking powder
- 250g caster sugar
- 3 beaten eggs
- 1 tsp vanilla extract
To make the Biscotti simply mix together the flour, eggs, baking powder, eggs, vanilla extract and sugar until you have a dough. Then add in your ingredients of choice. For the chocolate Biscotti we divided the dough in half and added coco powder to one half, along with around 20 pistachio nuts, some Green & Blacks chocolate cut into chocolate chips and some orange rind. For the other, non-chocolate half we simply added in some hazelnuts, almonds and pistachios.
Once you have added in your filling, simply roll both halves into two separate logs and place in the oven for 25 mins. When the time is up, take out the oven and cut each log into 10 slices per log. Place back in the oven for 15 mins, take out, leave to cool and enjoy.
