Victoria Sponge is a classic. It tastes so good and is perfect for all occasions, be that birthday cakes or just a treat with your tea.
We used the following recipe to make a Captain America Birthday cake. Below is the base recipe which you can then decorate as a special occasion cake or just dust with icing sugar and have with a cup of tea.
Before you get started, grease two round cake tins and pre-heat the oven to 190c.
Victoria Sponge Recipe
Sponge
- 200g caster sugar
- 200g softened butter
- 4 eggs, beaten
- 200g Sifted self-raising flour
- 1 tsp baking powder
- 2 tbsp milk
For the filling
- 100g Soft butter
- 140g Sifted icing sugar
- Strawberry jam
Method
For the sponge, cream together the butter, sugar and vanilla extract. Next add in the baking powder, an egg and some self raising flour, mix and then repeat until you have used all of the eggs and flour. If the mixture is a little stiff then add in the milk.
Next, divide the mixture between the two cake tins and place in the oven for around 20 mins until the top is golden and springy to the touch. Leave aside to cool then transfer onto a wire rack.
Meanwhile, make the butter icing by creaming together the butter and icing sugar until a butter icing is formed.
Once the cake has completely cooled spread one half with jam and another with the butter icing. Place the half with jam on top of the other half and turn over. You now have your cake which you can dust with icing or decorate.
