Mars Bar Cheesecake Recipe

Our Mars Bar Cheesecake was inspired by a pub which didn’t quite pull off the idea all that well. So we decided to have a go ourselves and feel that our version is so much better.

So here’s the recipe.

Mars Bar Cheesecake Recipe

Biscuit Base

  • 1 x Tablespoon butter
  • 1 x Tablespoon golden syrup
  • 175g Caramelised Biscuits – crushed (we used Lotus Biscoff, although you can use digestives if you wish)

Method

Melt the butter in a pan along with the syrup. Once you have done this, add in the crushed biscuits (easy crushed in a food processor or with the end of a rolling pin). Mix well and then add to a baking tin, making sure to press firmly on the biscuit mixture to make sure it is well compacted.

Next make the filling.

Filling

  • 3 x Mars bars
  • 250G x Mascarpone
  • 2 x Tablespoons greek yoghurt
  • 2 x Tablespoons coca powder
  • 140G Caster Sugar

Method

Mix the sugar, mascarpone, coca powder and greek yoghurt together until well combined. Next cut two of the Mars bars into smallish chunks and then add to the rest of the mixture.

Place on top of the biscuit mixture, cut the final mars bar and place some pieces on top to decorate. Refrigerate until set.

Serve and Enjoy!
