Peanut Butter, Walnut and Chocolate Chip Cookie Recipe

Cookies are great, especially when you make them yourself. The following recipe was born of just finding things in the cupboard, but tastes great.

Here’s what you’ll need, but first pre-heat the oven to 175c.

Peanut Butter, Walnut and Chocolate Chip Cookie Recipe (makes around 20 cookies)

  • 200G Self Raising Flour
  • 60G Butter (Room Temperature)
  • Large Tablespoon of Crunchy Peanut Butter (We find that Whole Earth’s Crunchy Peanut Butter works best)
  • 50G Caster Sugar
  • 1 Egg
  • A Handfull of Shelled Walnuts
  • 75G Chocolate Chips

Making these cookies is quite simple really. If you have a food processor then mix the flour, sugar and butter until a breadcrumb like texture appears. If you are using your hands then simply rub until you get the same texture. Next add the egg and mix until you have a large ball of dough, if the mixture is a little dry then simply add a little water.

Once you have your dough then flatten by hand on a lightly floured surface and then pick of a small handful of dough, shape it into a ball and then flatten it gently into a cookie like shape. Place the cookie onto a greased tray and repeat until you have used all of the dough (you may need to make these in two batches).

Bake the cookies for around 10-15 minutes until they start to brown then remove from the oven, cool and serve.
