Lentils are very versatile, meaning that you can make a lot of tasty and wholesome dishes with them. One such dish is lentil gratin, which is easy to make and satisfying.
Here’s what you’ll need.
Lentil Gratin Recipe
- 3 x Cloves of Garlic (finely chopped)
- 1 x Onion (finely chopped)
- 4 x Medium carrots (finely chopped)
- 5 x Small sticks celery
- 6 x Large mushrooms
- Mixed herbs
- 180g Red lentils
- Cheddar Cheese (Or alternative such as mozzarella or parmesan)
Method
Fry the mushrooms in a pan with a knob of butter, one glove of garlic and some parsley. Cook until golden. In a separate pan, fry the onion, carrots, celery and remaining garlic with the mixed herbs.
Next, put the lentils in a pot and cover with boiling water, leave to simmer on a medium heat until some of the water has boiled off. At this point add in the onion, carrots, celery and garlic which you previously fried and mix. Leave this mixture to cook until the lentils are soft.
Pre-heat the oven to around 180c.
Once the lentils are soft, transfer to a oven dish and layer the fried mushrooms on top. Next grate some some cheese on top until the mixture is covered. Place in the oven until the cheese melted and browned off.
Serve with salad or your choice of side.
